Cauliflower “Ground Beef”

Ingredients:

  • 1 head cauliflower, chopped into popcorn-sized pieces (large, popped kernels), approx. 8 cups

  • 1 Tbsp. canola oil

  • 2-3 Tbsp. Braggs Liquid Aminos (or Coconut Aminos)

  • 1½ tsp. cumin

  • ¾ tsp. ground coriander

  • ½ tsp. onion powder

  • ½ tsp. chili powder

  • ¼ C chickpea flour

Instructions:

Preheat oven to 400 F.


Place cauliflower in a large bowl; coat with oil, add Liquid Aminos, and stir.


Combine dry ingredients; add to cauliflower; stir to distribute.


Line baking sheet with parchment paper; spread cauliflower in single layer.


Bake for 30 minutes; turn. Bake for an additional 20 minutes.


Broil for extra brownness about 10 minutes; watch closely to prevent burning.


This recipe is perfect when you are looking to add deep, beefy flavor without meat or soy. It can be added to any pasta dish, salads, soups, lettuce wraps or tacos.
